Serves 4
1kg diced shin of beef
2 tbsp flour
Salt and pepper
2 tbsp olive oil
6 shallots peeled
4 carrots, peeled and cut into chunks
2 tbsp fresh thyme
1 bulb of garlic cut in half
300ml Beefsteak Club Malbec
1 pint of beef stock
Here’s how
- Dust the beef in the flour and season with salt and pepper
- Pour the oil into a shallow oven proof dish, then add the beef and cook until golden and brown.
- Be brave and cook the beef to a dark brown colour as the darker the colour the bigger the flavour at the end.
- Add the shallots, carrots and garlic.
- Pour in the Beefsteak Club wine and bring up to the boil, then add the beef stock and fresh thyme.
- Once boiling put a lid on it and simmer for 2 hours or put it into the oven at 160c for 3 hours.
- You can also put it in the slow cooker on a high heat for 6 hours.
- Lift the garlic out and leave to cool for 10 minutes before squeezing the garlic insides back into the stew for extra flavour.
- Once cooked and the beef is tender, taste and season with a little salt and pepper.
- Serve with a glass of Beefsteak Club Malbec!
