225g Chorizo cut into 1/2cm slices 2 tbsp Olive oil
2 Garlic cloves
250g Chunks of old bread
100ml Beefsteak Club Malbec 20g Butter
1 Large romaine lettuce
80g Manchego cheese
Here’s How
Place the chorizo slices into a shallow frying pan on a medium heat with the smashed garlic and olive oil.
Cook for 5 minutes, stirring to make sure the sausage doesn’t burn and the oil from the chorizo naturally releases.
Tear up the chunks of bread and add to the frying pan.
Cook for 4-5 minutes letting the bread absorb the oil and flavour from the chorizo. Meanwhile, cut the lettuce into 1/4’s and place in a bowl.
Once the bread is crisp, remove from the pan and add to the bowl with their lettuce.
Pour the wine into the pan with the chorizo and turn the heat up until it boils. Reduce the red wine and add the butter, then remove from the heat.
Add the chorizo and sauce to the salad and scatter over some thinly sliced Manchego cheese
