Ingredients
400g Minced beef
150g Pork sausage meat
100g fresh breadcrumbs
100g Ricotta cheese
1 large free range egg
100g grated Parmesan cheese
2 cloves garlic, chopped
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
400g Tin Italian chopped tomatoes, poured through a sieve 100ml Red wine
Here’s How
Preheat the oven to 170°C
In a large mixing bowl, combine the ground beef and ground pork with the breadcrumbs, grated Parmesan cheese, ricotta cheese , egg, chopped garlic, dried oregano, salt and black pepper.
Mix well to combine all the ingredients.
Divide the mixture into 12 meatballs and using wet hands roll into balls and place into a non stick frying pan.
Cook the meatballs on a high heat until golden brown.
Pour the wine and chopped tomatoes into an oven proof dish, then place the meatballs into the dish so that they are sitting in the sauce, this means the meatballs will poach in the sauce and be nice and juicy.
Bake for about 20-25 minutes, or until the meatballs are cooked through.
Once cooked, remove the meatballs from the oven, add a few teaspoons of ricotta and finish with grated parmesan cheese
Serve the mega meatballs with pasta, spaghetti, or as a delicious sandwich filling.
